Broccoli Bulgur Basil Bliss

All I can say is that it is embarrassing to know the number of times my spoon has gone into the glass container originally packed full with Broccoli Bulgur Basil Bliss. I adore oil, lemon and basil. Tomatoes this time of year are just big ‘ol grapes that need a bite or two. And broccoli? I can devour a steamer basket of that any time at all. So…here goes. And you can use this as a main dish with a nice cup of soup or plate of greens, or stuff it in a wrap that you shmeared with hummus, or do what I do and eat it from the fridge.

Get it together already:

4 cups of chopped broccoli that you have first steamed (I usually steam a big bunch and dip into it for salad or finger food. )

1 and a 1/2 cups of cooked bulgur wheat. (Follow package directions to cook.)

1 big fat juicy tomato, or 2 if you are a fan of big fat juicy tomatoes…

1/2 cup of thinly sliced red onion (if you have scallion you can use that)

juice of one lemon (if it is a little bitty lemon, you better use 2)

olive oil to taste…probably I used about a third of a cup, but you do your thing…

*a clove of minced up garlic is fabulous, your choice…

Do that thing…

In a nice, monster bowl, dump the broccoli, bulgur, tomato, basil, onion, garlic and get them all friendly and mingling.

Add the olive oil. Add the lemon. Sea salt it. (I am in serious lust with sea salt.) Grind on some pepper.

Toss. Adjust seasonings. Now, even though it is perfectly fine this way, chilling it for a couple of hours brings it to a whole different level. So, chill, I say.

Simple, humble, seasonably perfect…that’s how we get the Bliss.
